  1. Preheat oven to 180oC.
  2. Lightly oil muffin tray.
  3. Beat eggs in a large jug. Add melted butter, flour and baking powder then whisk. Add milk until a thick but pouring consistency is achieved.
  4. Chop onion, chives and spinach.
  5. Grate cheese.
  6. Season batter with salt and pepper then pour muffin batter into tray, filling 1/2 of each section.
  7. Add onion, chives, spinach and cheese to each tray compartment. Mix each compartment's contents with a spoon so the batter covers the fresh ingredients.
  8. Bake for 20mins.
  9. Remove from oven and allow to cool for 10mins before removing from the tray.
  10. Store in an airtight container for up to 1week. For future use, reheat each muffin for 15secs in a microwave.
