Pandan is the vanilla extract of Southeast Asia and it is what gives these Vietnamese waffles their iconic green color and wonderful aroma. Ingredients of Pandan Waffle
- It's 2 cups of plain flour (250 gr plain flour).
- It's 1/2 cup of sugar (125 gr sugar).
- Prepare 3 tsp of corn flour.
- Prepare 3/4 tsp of salt.
- You need 2 tsp of baking powder.
- It's 1/2 tsp of baking soda.
- You need 2 of eggs, separate the whites and the yolks.
- It's 2 cups of coconut milk (1 box 200 ml and 1 small 60 ml kara coconut milk, add water until reach 2 cups).
- Prepare 30 gr of butter, melted (let it cool a while).
- You need 1 tsp of pandan flavoured paste.
You cut the pandan leaves into smaller pieces, blend them with a bit of water then strained. Pandan Waffles (Banh Kep La Dua) These Pandan Waffles (Banh Kep La Dua) are far from ordinary! Made from a batter using creamy coconut milk and fragrant Pandan flavoring, the waffles are cooked until golden brown. They are deliciously crispy on the outside, soft and slightly chewy on the inside and perfectly sweet.
Pandan Waffle step by step
- Dry ingredients: sift plain flour, corn flour, sugar, salt, baking powder and baking soda in a big bowl.
- Mix wet ingredients: egg yolks, coconut milk, melted butter, pandan extract.
- Mix dry and wet ingredients (do not overmix) until all ingredients are incorporated.
- In separate bowl, whisk the egg whites until they reach stiff peaks.
- Fold in the egg whites with the rest of the batter. Leave it for 10-15 minutes.
- Cook the batter in your preheated waffle maker 🧇🧇.
Sift the self-raising flour into a large bowl and combine it with the sugar, milk, coconut cream, eggs, pandan extract and dry coconut shreds. Tip: Add the dry coconut shreds in last so it isn't coated with flour because that will prevent the batter from sticking to it.
