  1. Prepare 4 of medium potatoes.
  2. You need 1 of large onion.
  3. Prepare 1 of medium egg.
  4. Prepare 1 tsp of onion salt.
  5. You need 1 tsp of black pepper.
  6. Prepare of FryLight oil spray (butter).

  5. 1 teaspoon of black pepper is approximately 200 twists of the pepper mill if you'd prefer not to measure it..
  6. Your mixture is now ready! Spray your largest pan (if you want to fit all four in) with FryLight oil, you can really taste the flavour so I use the butter flavour for these..
  7. Divide the mix up and cup in to balls then add to the pan and flatten once in situ. You can't really move them until the first side is cooked..
  8. Spray liberally with FryLight throughout so that they don't stick, turn once the first side is nicely browned. You should only have to turn them once, any more and they risk falling apart..

The hash browns can be prepared a day ahead and chilled until ready to cook or frozen for up to a month. Skip the frozen hash browns and fry up your own potato cakes for brunch. It's just a potato, an onion, a tablespoon of plain flour and an egg. Brush the surface of the baking tray with oil again and flip each hash brown making sure that it sits directly on the oiled patch. Hash browns are simple to make and provide delicious results.
